In the relentless rhythm of the standard American diet, my journey took an unexpected detour four years ago, propelling me towards a life-altering choice – the embrace of a 100% plant-based lifestyle. This shift marked a profound transformation from a lifetime of indulging my taste buds, to truly nourishing my body and soul.

For the initial 28 years, I blissfully surrendered to the symphony of flavors that characterized the standard American diet. If it tantalized my taste buds, I indulged without a second thought. Little did I realize that these choices were laying the groundwork for a body in silent distress. Internal issues such as pH imbalances and chronic allergies quietly accumulated, never quite reaching the point of urgency but persistently gnawing at my overall well-being.
The Awakening: The Dairy Dilemma and Infatuation with Animal Protein
As a self-proclaimed foodie, the revelation about the detrimental effects of dairy products and animal protein was a sobering game-changer. Reflecting on my foundational years, I realized from a nutritional standpoint, it sucked! I grew up in the 90s as a formula baby, never breastfed. I consumed whole cow’s milk multiple times a day in a variety of ways. I was passionately in love with creams and cheese. I was definitely somewhat neglectful of the vibrant array of vegetables and fruit. I ate so much processed and fast food. Still through all of this I “looked healthy” all while nurturing a vessel filled with dis-ease.
The Turning Point: Unraveling the Secrets of Gut Health
The epiphany struck in my late twenties when I delved into the intricate world of gut health. I discovered that a staggering 90% of our immune system resides in our gut. The key to nourishing it lay in dietary fiber, a nutrient exclusively found in plants. Being realistic of my journey and the foundation of my physical body, I knew my gut was in need of a total repair and reset! I learned about the subtle beginnings of heart disease and how it is linked to childhood dietary habits similar to mine. Same with the relationship with an overconsumption of animal protein and how it’s linked to certain cancers.

Scientifically, the plant-based lifestyle stands as a triumph for human health. The fiber-rich nature of these lifestyles not only fosters gut health but also plays a pivotal role in preventing chronic diseases.
The Scary Reality of Animal Protein and Dairy Overconsumption
Conversely, the dark side of our dietary choices becomes glaringly evident when we examine the consequences of overconsumption of animal protein and dairy. The prevailing belief in the necessity of these products for optimal health has come under scrutiny as scientific research exposes alarming truths.
Cardiovascular Conundrum: he overconsumption of animal protein and dairy is closely linked to an increased risk of cardiovascular diseases. The high levels of saturated fats and cholesterol present in these products contribute to elevated blood cholesterol levels, a significant precursor to heart problems.
Cancer Concerns: Overindulgence in animal protein has been identified as a potential cause of benign growths, which can progress to cancer. Scientific studies, such as the one by Michaud et al., highlighted the intricate interplay of factors, including the presence of hormones in animal products, raising concerns about the impact of these dietary choices on long-term health.

Lactose Intolerance and Ethnicity: The prevalence of lactose intolerance varies among different ethnic groups, with people of African, Asian, Native American, and Hispanic descent showing higher rates compared to individuals of Northern European descent.

This ethnic variation in lactose intolerance underscores the importance of recognizing that dietary guidelines should be tailored to individual needs and backgrounds. For many people of color, the discomfort and health issues stemming from lactose intolerance further challenge the notion that dairy is a universally beneficial component of our diets.

The Metamorphosis: Healing from Within
Armed with newfound knowledge, I embarked on a journey to heal from within. I did a complete kitchen reset and threw away all of the food that did not fall in line with my new found nutritional beliefs. Of course this kitchen reset happened after a pretty big grocery trip. But that did not stop me. I was in the mindset of “oh shoot, I spent the last 28 years doing this much damage, I know it will take time to reverse any of the after effects.”
This reset took place one week after a cruise, where I literally went out with a bang! I indulged in all of the food and it was amazing! Cruises are wonderful because it’s a big party boat with all you can eat and drink! I was 16 weeks pregnant during the cruise, so I did not drink, but I sure did eat!
Being 18 weeks pregnant during the mindset and nutritional shift honestly made my decision and transition even easier, because I was carrying my daughter. She deserved the start I did not receive from a nutritional level even before coming earthside. Pictured below is the same night shopping for fruits and vegetables at walmart. It was late at night and I had to work with what I had available!
An important note is to start where you are at. Buy a few choices or fruit and vegetables and start experimenting with recipes. See what sticks and what doesn’t. Everyone’s palette is uniquely theirs, so this transition is not one taste fits all!
Overall, these shifts in my daily choices echoed loudly in my transformed well-being. No longer plagued by allergies, my body found its path to healing. The power of plants, with their innate ability to restore and rejuvenate, became my guiding light.
The Unfolding Odyssey: Beyond the Plate
This isn’t merely a story of dietary changes; it’s an intimate tale of self-discovery, resilience, and the profound impact of choosing life over mere sustenance. Four years of learning and applying has allowed my plant-based journey to unfold in a magical way. I’ve learned and am still learning of ways to maximize the use of plants for my vessel. The power of plants truly transcends the plate and touches the very core of our existence. This journey has been one full of self love and acceptance. Being able to provide the nutrients my body needs to continue to thrive is a blessing. My body and soul have been and will continue to align while on this journey.
This narrative isn’t a call for drastic lifestyle changes but an invitation to consider the impact of our dietary choices on our wholistic well-being. The scientific backing of a plant-based lifestyle coupled with the stark reality of excess dairy and animal protein; and their effects on health serves as a compelling testament to the transformative power of conscious eating.
